I have had SO many people ask me for the recipe for my masala chai-infused sugar cookies with frosting, so here it is for you to enjoy!
A couple of notes: I like my cookies BIG so I scoop mine out with a 1/3 cup scoop, but you are welcome to go smaller with a 1/4 cup scoop. Also, pro tip: the spoons from Orange Leaf not only make perfect baby spoons (I've used them for numerous babies including a nine month old currently in our home), but they are also perfect for helping get the dough out of your scoop and onto the tray!
Masala Chai-infused Sugar Cookies
Ingredients:
- 2 1/2 cups all-purpose flour
- 2 tsp. baking powder
- 3/4 tsp. fine sea salt
- 2 sticks (226 grams) unsalted butter
- 1 1/4 cups granulated sugar
- 1 large egg plus 1 egg yolk
- 2 tbsp. Midwest Chai masala chai tea powder
Directions:
- Preheat the oven to 375 degrees F.
- Line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, salt, and masala chai tea powder to combine.
- In a large bowl, use an electric mixer fitted with the appropriate paddle attachment on medium high speed to beat the butter and 1 1/4 cups sugar until light and fluffy, 2-3 minutes. Add the egg and egg yolk and beat until combined. Slowly beat in the flour mixture.
- Scoop out dough with a 1/3 cup scoop and place on the prepared baking sheets, then press down on the scooped dough to flatten to a round disc. Space 2 inches apart (I do 8 on a baking sheet).
- Bake for 11-14 minutes. I personally do right around 12 minutes so that they are 'just' baked and will remain soft and amazing to bite into. I typically wait until the 'crinkle' has formed across the top, like in this picture:
- Makes 8-9 large cookies. Going with a 1/4 cup scoop will net you up to 16 cookies.
Masala Chai-infused Frosting
Ingredients:
- 2/3 cup butter, softened
- 1/2 cup milk
- 2 lbs powdered sugar (one bag)
- 1 tbsp. Midwest Chai masala chai tea powder
Directions:
- In a mixing bowl, cream together the butter and milk with an electric mixer.
- Slowly mix in the powdered sugar and the masala chai tea powder.
- Immediately frost your sugar cookies! This frosting is meant to harden quickly. A thicker frosting will harden quicker and spread a little more easily, and to get that you can add more powdered sugar a little bit at a time. For a runnier frosting, simply add milk a little bit at a time.
